however I think it's abit unfair to categorise all epic sounding metal bands of this type as viking, because vikings just describe a particular group of people. What about those "viking" bands that sing about celts?

not a genre. "viking metal" means fuck all. if someone can actually explain how a band meets the "viking metal" genre definition, then i might actually take it into consideration. however, there doesn't appear to be any consistent use of the label, other than through lyrics (and even that is used loosley).
 
As I said before, compare Wyrd and Moonsorrow. Both have elements of Folk and Black, but Moonsorrow as sure as hell "more" than just Folk/Black. They have that extra "epic" feel to their music, which constitutes the "Viking" tag.

Sure it sounds stupid, sure it probably is stupid, but I've grown used to using it as it is simpler in my mind.
