Depends, if you want it in swedish or norwegian. I usually write ö instead of ø because I have it on my keyboard and I need one more keystroke (ö+alt gr) to make an ø. I don't even know if Dødens Grav is correct norwegian but Dödens Grav is correct swedish atleast.
The pronunciation is exactly the same so it doesn't really matter in the end.

They are spoken and is a separate letter in swedish (aswell as some other languages) respectively norwegian (aswell as danish).

The ø is supposed to be there; like Vilden said, it's the Norwegian letter for that specific sound. If it was Dodens and not Dødens, it'd be pronounced like "doodens".
