Depends, if you want it in swedish or norwegian. I usually write ö instead of ø because I have it on my keyboard and I need one more keystroke (ö+alt gr) to make an ø. I don't even know if Dødens Grav is correct norwegian but Dödens Grav is correct swedish atleast. :)
The pronunciation is exactly the same so it doesn't really matter in the end.
 
yeah that much I know. The Umuluat is present in german as well.

What I mean was, if the umuluat or o/ thing were spoken in the word Dodens, or if it was just for show.

The ø is supposed to be there; like Vilden said, it's the Norwegian letter for that specific sound. If it was Dodens and not Dødens, it'd be pronounced like "doodens".
