I'm currently transitioning from an omnivore to a vegan diet, doing lots of reading about all aspects of it, and so far I couldn't be happier, even though I'm still taking small amounts of dairy every now and then, I'm finding all the proper substitutes and slowly eliminating them from my house and diet.

Now, as I read in The Ultimate Vegan Guide, the best way to make an easy and happy transition without feeling like you're sacrificing your favorite meals is not by cutting out non-vegan foods, but by "crowding" them out instead, which means incorporating so many delicious meals you had no idea existed to the point of not missing nor craving for those animal product meals.

So my point is, I don't want this thread to be a discussion as to why you should or shouldn't be vegan, I simply want to share the experience with like-minded people by posting pictures/recipes of meals I've done, and would love if any other meat-free guys or occasional eaters of vegan food would share some of their own and any other part of the experience. It would also be good to specify what's vegan and what's vegetarian, to avoid confusion. I'll start with a few of the first dishes I've made, some are only vegetarian because I hadn't realized I can buy vegan mayonnaise at the same supermarket where I do all my shopping, but most of it is aiming to be vegan.

Vegan Stroganoff (with Seitan instead of meat):

Vegan "Tortilla" (Spanish omellete, with chickpea flour instead of eggs):

Eggplant Milanesa and a boiled potato and carrot salad (vegetarian because of the mayonnaise, the rest is vegan, the eggplant was breaded with chickpea flour instead of egg):

And I've also been making lots of creative sandwiches in Pita bread instead of the old ham and cheese sandwich I've grown tired of and not missing since I quit meat and dairy, among which my favorite is probably stir-fried mushrooms and hummus, but I have a picture of another good one, a fried pepper with lettuce, corn and vegan mayonnaise:

I like this thread already. I live vegetarian since last december and very happy so far. I was a pretty big meat fan, but decided to stop eating it for ethical reasons. The only time I really "regret" my decision is when eating at restaurants because most awesome meals over here are with meat (as are/were most of my favorites). I also eat vegan from time to time, because some of my friends live completely vegan and also because it's awesome. In fact a lot of vegetarian meals I like are vegan or can easily be transformed to vegan with soy cream or milk.

My favorite vegan meals so far are "Chili con tofu" and vegetarian curry. I'll probably post the receipts later, both are really easy and taste freakin awesome :D
 
Search Isa Maschowitz's, Vegan with a Vengenace. Fantastic vegan cook book. Also co-authored Vegan Cupcakes Take Over The World. I'd also recommend talking with a vitamin specialist because vegans are especially prone to definencies in Vitamin A, B12 and Iron. Also, learn to make kale chips ;) good luck!!!!

I know, eating out can be a pain in the butt, here in Galicia going to a typical food restaurant means eating only Spanish omellete if you're ovo-lacto, and in some case absolutely nothing if you're vegan, these places always have a "daily menu" with a few options to choose from, but none of them are ever vegan, not even vegetarian. I ate in those places too many times and don't really want to go there anyways, I'd rather go to a Turkish place and have a Falafel.

Yeah I've read a little bit on nutrition, I haven't started buying multivitamins (even though a couple of the books I've read recommend it), but I'm getting my Vitamin A, D and Calcium from Fortified soy milk, and still reading up on making sure I'm getting all I need from what I'm eating, and I might end up buying supplements when I'm more clear about it all.
 
I've got a couple of vegetarian recipe books so I try some of that stuff once in a while. But for most of the time I'm a carnivore I guess :D

However, you don't need multivitamins; just make sure you get a good Vitamin B12 supplement (i.e. methylcobalamin).
You can get everything else from the delicious meals you make. :)

Interesting, I'll have to check, I've been eating soy for ages since my wife's been a veggie for pretty much since she's been old enough to decide, so soy in many forms has been in my diet for a long time. Got any links to check?
 
Don't have any links to anything on hand, I only really consume soy in the form of edemame, and only occasionally so it's not something I've read up on extensively.
But it's something you should probably be aware of if you consume large amounts regularly.

If you wanted to cut down on soya try coconut milk....really great in tea/coffee. Not the biggest fan of it on cereal but meh...its also great for cooking and it's healthier for you.

You don't have to be more concerned about the phytoestrogens in soy products than about the estrogens in animal products (which, other than phytoestrogens, are actually estrogens). But who would've thought that there are hormones in cow's milk - oh wait... ;)

You don't need any soy products in your vegan diet though.

And yes, I was the one talking about moral schizophrenia. I'm glad that it got you thinking. :)
 
I have no idea what you are referring to with the moral schizophrenia thing.

Like I said, I don't consume enough soy to have any reason to be concerned about it's possible associated health issues.
However someone who is vegan in all likelihood does, so I was just making sure he was at least aware of it, as he should be whether or not there is any real issue.
