My advisor is from mexico, so he always hired a fuckload of mexicans, and their mexican food was so great.I grew up in southern Colorado. I prefer their Mexican food to Tex-Mex but the latter's quality varies around the state. Mexican food in Dallas is garbage. Down in South Texas is golden.
And green chili is life.
I think it's the lack of acid in american mexican food that makes it less good. Beef + chile + oranges/limes is the fucking best.
