Not metal in any way, but Trent Reznor has released stuff from his last 4 albums (With Teeth, Year Zero, Ghosts I-IV & The Slip). The Slip is probably the most organic, but Ghosts has some really interesting stuff going on in it.

In theory, couldn't a person isolate tracks from a 5.1 mix and have something comparable to stems to play with?
