Are you looking for bands that are more on the prog side of things? Because for me a solo has to fit the music and sometimes a super technical solo isn't what is needed. Like on some of Slayer's better classics. Could you imagine some prog nerd stuff on those? It would ruin the song. With Nevermore however, the more prog elements are one of the things that make them so great.

Yeah, but I suck! No seriously, I just wanted to know what he considers great solos. What exactly is he looking for. Listing a ton of bands is just too easy and not as helpful.

depends on your definition of what a great solo is. To me a great solo is intense, epic, dramatic, and technically skilled at the same time. Bands like Opeth, Symphony X, and Pain Of Salvation display all of these favorite elements of mine.
