A German word meaning "soil" or "ground." Like the French GOÛT DE TERROIR, bodengeschmack, which means "taste of the soil," refers to wines with an earthy flavor that reflects the soil in which the grapes were grown. RIESLING grapes grown in slate-based terrain, such as that found in the MOSEL-SAAR-RUWER region, are said to absorb a slate flavor and transmit it to the wines.
