Well, I'll continue to listen to Hammerheart (the album) and I'll tell you... I like it but I'm not blown away you know. I hope this is note a too huge offense here :D

It doesn't really belong to this topic but I'm really fan of Demons and Wizards/Blind Guardian/Iced Earth

I listened to some of the names you gave me but most of the time, I find music too extreme or vocals doesn't change a lot or there's no acoustic part.

I'm still searching for epic prog dark metal that makes me travelling...
 
But it doesn't make me think of something from mountains/forest
If the forest is so important to you, try In The Woods or Carpathian Forest ;) Seriously, here are my recommendations:

The fact is... I love In The Woods!! :p it's like Opeth, I find there's something about Nature in this music but it's totally subjective ;)

I like this Immortal too, I find it really epic, more than a lot of bands with more production or instruments!

It's not what I mean, just that there's not a huge orchestra or 12 guitar tracks overdubs, well maybe but it sounds great! I don't feel it is "over produced"

Don't know if someone has mentioned Wintersun but the lead singer is actually the ex-lead vocals for Ensiferum which is a great viking/folk band who will also be at Pagan Fest:kickass:
