When you have a real drums recorded tracks,do you usually cancel the track's parts not played (for example toms tracks or snare tracks),or do you take all the bleeds in ?

Guess it depends... the bleed can add an important part of the sound, if it's in phase and the room sounds good etc. I wouldn't count on many top produced metal records that keep the bleeds though... they barely keep the orginal audio signal so... :D

I used to cut, trim and fade but that was when I used to sample toms 100%. I feel if micked up the toms properly the bleed adds to the drums sound in a good way, making it more organic (but that's debatable). I still sample the actual toms with their own samples just for consistency.

I've also thought about cutting between the hats and ride, but when it comes back in, it sounds too sudden and can SORTA hear that it's been edited.

I generally cut bleed on tom mics, not snare, unless the snare is heavily gated. However, if the drums were really well tuned you might not have to. I've never personally had the privilege of recording a kit tuned well enough that I didn't feel the need to edit/gate the toms.
