Easiest.stress free genre to record?

I'm going to be ready to record bands in my house soon just need some more drum mics and learning and i should be done, however i know metal is a pretty stress inducing genre with all the need for uber tightness/sample replacement etc...
So was wondering what are some easy(er) genres to practice on so that i can slowly ease into the metal world?

I was thinking pop punk but i also that thought that they might not be able to play there shit
any ideas?

Anything that's primarily played live, so you don't have to deal with as much editing! (e.g. Jazz, as was mentioned, as well as classical and, believe it or not, church services and other worship stuff, there's definitely money to be made there!)

Jazz musicians can actually play their shit, and put (99.999999999% of) metal musicians to shame any day of the week.

i know they can play there shit and all (Im a fan of da swing )
but it just sounds really busy and hard to get each thing heard .
and also back to the church question do you lug your stuff to the church and record them in the church or add all that room digitally?
