I've seen a few posts on how to make guitars wider and production tips to get that, but haven't really seen anyone mention actual song composition.

I'd like to put forward an example of what each guitar plays can impact the stereo spread: Machine Head - Locust.

The riff that kicks in at 0:53. Listen to the L/R guitars, as they play the same notes, then as they shift to playing different notes (1:00) how they seem to become wider.

Hopefully that's an interesting example to some.

I consider this at all times. I find that if I keep clean or slightly dirty guitars at about 30-50% panned, when the full distorted guitars come in (at hard L/R panning) it adds a lot of width/depth. Although, this is something that is taken into consideration during the arranging stage for me. It all depends on the song.

The thing is that this is about the composer's taste not about the mixing engineer's skill. They're just playing different parts.

Yep, listen to Cynic's Focus album and it's very apparent, since they hardly play the same thing ever.
