It is hard for me to pick out a single favorite solo, but I became interested in playing guitar after hearing Dream Theater's Under a Glass Moon. So I guess if I had to chose, it would be this.

Randy Rhoads' solo on Over the Mountain is one of my all time favs that comes to mind right away. Starts about 2:30. Short and sweet.

Mustaine has a ton of classic solos. The solos in Hangar 18 come to mind.
