Oingo Boingo or System of a Down. Not for technical skill reason, but for the uniqueness of the original. I think many bands would have a hard time bringing out these bands' song ideas effectively.

I'm not sure, but a lot of the covers on Guitar Hero(es) I and II are pretty gay in comparison to the original. How do you replace the original spine-tingling vocals of Glenn Danzig, Zach de la Rocha, or Axl Rose? You can't.

I would hate to try cover Cynic... The bass parts in particular are very hard and not always on a bass :S How many guys do you know that own a chapman stick?

Other then that, covering Slipknot would be interesting as you would need to find 9 members including a turntablist and someone with a keyboard that can handle a ton of samples and then have guitars just lying around somewhere in drop A or drop B tuning.

Tbh assuming you mean straight covers which just sound as much like the original as possible... something with a really unique vocalist would be hardest. Necrophagist / Racer X / Joe Satriani.. loads of people can play that stuff with ease.
