Ok so I don't really know how to classify it but basically, looking for things like Pink Floyd's Echoes or Shine On You Crazy Diamond or Porcupine Tree's Sky Moves Sideways or Russia On Ice.

I've been checking out some post rock but most of it drones a little too much and doesn't really develop into much.

I also checked out Ozric Tentacles but the trance elements are just kinda a turn-off.

So basically I'm looking for a middle ground between the two - so stuff that doesn't make me feel like I'm in an a night club but also stuff with a little more energy and variation than most post-rock.

Pretty limited supply of things like this but if anyone can suggest things it'd be appreciated.

Hmmm, thats a pretty specific niche. Obviously you got the old prog like Yes, Rush, Camel and CAN that have some songs like the ones you've mentioned, but you've probably already heard of all of them.

You might like a record called Psychic Psummer by Cave, its like a throwback to old prog with a heavy psychedelic influence. (http://www.importantrecords.com/releases/imprec247_release_page.htm check out Gamm if you like that you'll love the whole thing.)
Also a band called Assemble Head in Sunburst Sound is heavy on the psych and sounds a little Pink Floyd-ish but without the ambiance. (http://www.myspace.com/theassembleheadinsunburstsound check out Two Birds.)

Ummm The Flaming Lips maybe too, but you've probably heard of them as well.

As for interesting post-rock, not really in within your guidelines, but try And So I Watch You From Afar, they're probably the most interesting of any post-rock band i've heard in a while.

The new Mono if you haven't heard it already. I just heard a cool record called Inventions for the new Season by Maserati, you might dig that too. (http://www.myspace.com/maseratirocks)

Definitely check out the new Mars Volta, its proggy but ambient and moody, you would definitely like it. (Whole thing streaming here, http://www.myspace.com/themarsvolta check out Desperate Graves and With The Twilight as My Guide)

Well I think thats all I got for you man, hopefully something hit for you!

Yea I like the new Mono and Camel is one of my favorite bands though they're not as ambient as the ones I mentioned. Will take a look at the rest of those tomorrow. I'm worn out with slower things from the Ozrics tonight so I have to go all black metal till bed for now lol.

About halfway through the new Mars Volta right now - idk...it seems little too vocally oriented despite the instrumentation being ambient. I liked those Hawkwind clips and I was intending to check out Eloy too, thanks all.

New Mars Volta had nice parts but I really wish more of it was instrumental. All in all better than some stuff I'd heard from them but not great.

Listening to Eloy - Ocean right now, and it's just what the doctor ordered. So, thanks @ ahnkou
