I'm working on it. I'll probably put away a bottle of Chimay Blue for a few years. the beer cellar nerds at beeradvocate were talking about sitting on bottles of it for over 10 years, and it tasting like gold afterwards

I think cellaring is a crap shoot. I usually only cellar a beer that I've had many times, and yet most of the time I just drink it.

Belgian ales don't really do it for me, the exception being american (hoppy) takes on belgian styles, like Flying Dog's BIPA "Raging Bitch", and Lagunitas Little Sumpin Wild.

i tried that new Stone Cali-Belgique which is basically the regular Stone IPA but with Belgian yeast, and didnt care for it. the belgian yeast totally overpowered the usual awesome hoppy Stone IPA flavor and aroma. wont be buying again.
