The oboes are real. I'm fairly sure Per arranged at least the strings (Hessian Peel) and possibly the other instrumentation used on Watershed.
BTW, there's far better emulations out there than what Nords can provide. The EastWest Symphonic Orchestra (platinum edition) has some of the more realistic sounds I've heard- though can suffer with bad programming..
