Depends on how hot the car got. If you got to it before the sun cooked it too much, just throw it in the freezer. Should be fine.

I might just start with whatever extremity is the coldest and if that doesn't make me sick, I'll move to the next one.

Marinating is a wonderful idea though. At least that way it won't taste like rotting as much if it sat for a while
