What's the best hardware out there that can do guitar to MIDI? I'm sick of getting great ideas in my head and not being able to get my banana fingers around a keyboard.

Cheers! Seems there's not much in the way of variety with this sort of thing.
I just found this too. It seems to be able to do exactly what I'm after, but it's a bit expensive. It's pretty new and only one shop in the UK seems to stock it.. I might wait for a couple of months to see if the price gets a bit more competative. Or maybe Andy can ask to get one to "beta test" and I'll pay him back with "executive relief"
