Don't know what the highest number was but usually (when tracking) I have something like 16 Drumtracks 4 rh-git (by 2 mics+ 1 Di per track=12 in total), 1 Bass, 4-15 vox...
so approximately an average of 30-40 audiotracks...
during mixing I usually work with like 65 tracks (including groups and Fx etc)...
may vary from project to project though.
thinking about it.. I think the highest number might have been this recording:
Laila - Medley
(all real instruments - cept the remix of course...)
Huge live-recording incl. 3 percussionists, Bass, Piano, Strings, special instruments like monochord, flutes, kalimba, marimba, sax, sitar...name it+ many percussion overdubs etc...
don't remember how many tracks in total though...had like 4 or 5 rooms in the studio viedeo-connected and they all played live, improvised and jammed together....funny experience
some really top-notch studio-musicians though (Conny Sommer, Benjamin Hüllenkremer, etc.)..
3 days for 10 songs...(7 songs had to be written in the studio etc)...one of the strangest but most interesting productions I've been involved in....the only production that was as strange (or even stranger) was in the djungle of thailand...
