since the poll can only have 20 options and I was committed to including hammerfall and Venezuelan Beaver Cheese (tips cap to M. Python) I regretfully had to omit some varieties...
I actually should have left off Edam since it is so similar to gouda.

exactly. in Kroger yesterday I found extra sharp cheddar for my omelette and God smiled down upon me and it was good.

The sharper, the better. Mild cheddar is for children and invalids. I demand cheddar that smarts my mouth.

What do you all think of sharp provalone? We have it at the store I work at and it runs for 7.99 a pound, the most expensive of our cheese. I can't eat cold cheese (ate a bad piece of cheese as a kid and havent been able to eat it since), and was curious..

LOL at Hammerfall and Nad Head Cheese...provolone is worth that price.
