Looking for instrumentals with acoustic guitar, there CAN be other instruments too but no vocals. any genre too.
 
Michael Hedges, you need go no further. Though a bunch of neofolk or acoustic solo artists are good too.
 
October Falls does kick ass. I don't know how you feel about Opeth but they do have a handful of instrumental tracks that are quite nice.

Michael Hedges is obviously the greatest, don't waste time with McKee. All chops, no songwriting, just like most of those guys. Lots of the early windham hill guys ruled as well though, like Will Ackerman and Alex DeGrassi

anyway you should listen to Vali also
 
Previously mentioned: Michael Hedges is essentisl, and Andy Mckee is excellent. Also check out Don Ross, Antoine Dufour, Leo Kottke and Tommy Emmanuel. These are just off the top of my head. If you are interested in expanding into classical guitar,a good place to start is Andres Segovia.

Oh, October Falls is a great recommendation as well.

Kotaro Oshio, kinda does the same style as Mckee. Though I prefer Oshio's style slightly more.
