I tried not to repeat anything that was already posted. Here's some that I like:

Phlebotomized - In Search of Tranquility (all the songs can be heard on Immense, Intense, Suspense...but I like how they sound better on this EP).

Cradle of Filth- V Empire or Dark Phaerytales in Phallustein. Yes kids there was a time when Cradle was a good band and this EP is ample proof of it. 6 tracks including their best instrumental and perhaps their best song ever (Queen of Winter, Throned) a great re-recording of The Forest Whispers my Name a great intro track and a stunning closer.

My thoughts exactly. 'V Empire' might just be the best EP I've heard.

Theatres des Vampires' "Iubilaeum Anno Dracula 2001" was also pretty worthwhile.

Aside from a few, I generally don't care for EPs. Too often they are just very typical releases - 6 songs including a couple of covers or b-sides, maybe a new song, intro or remix etc.
 
Most of my favorites have been mentioned so far.

Moonspell's Under the Moonspell is fantastic, probably their only good release.
