I just made a win ass burger

After thoroughly re-reading it I'm pretty sure that's a "Do-me" burger.

Maybe of "In-n-Out" quality?

Would Pepper jack cheese be too overpowering a cheese? My favorite cheese for about anything.
 
yeah, you could do it, it would probably just make it more spicy, allthough, i don't think i would like it personally on this burger, as the spices used on the meat are more than sufficient in heat, you can use as much as you want to raise or lower the heat level....

and i'd say the spicyness of pepperjack cheese is a different kind than that acheived by the mentioned seasonings.
