I know absolutely nothing about this kind of music, or even if it should be generalised to Israel, but I'd like to hear more of it; probably best described as Orphaned Land without the metal (forgive my ignorance if there is a much more obvious description). I don't give a shit if you don't like Orphaned Land, I think tracks like A'Salk and Building the Ark are beautiful and want more. cheers

arto tuncboyacian, yusef lateef, a. r. rahman

check those 3 out, seeing as i dunno exactly what your looking for; the first is folk the second is jazz and the third is theatrical. all have their own unique brand of the 'middle eastern sound'.

cheb mami is a great recommendation. i got onto him after hearing him with sting on brand new day (the song desert rose, incredible). just another name you might wanna check out would be aviv geffen from blakfield. his music isnt really my thing but if your looking for eastern stuff i guess he'd fit.

there is a whole world of music from turkey to iran down to arabia and all the way over to morocco. there are many different styles and even the instruments can be different depending on where you go (at least it can differ which ones are more prominent).
see if you can find any tanburi cemil bey. you may even come across some recordings of his from 1910s, but there should be some good new recordings of his compositions. awesome stuff.

THE BEST METAL BAND THAT COMES FROM ISRAEL IS ASGAUT. IMHO. Their only album (Village) feat. Kobi from OL, and damn, it's one of my top albums, their music is absoloutely amazing, DEFINETELY check them out. I don't know what you would genre them as, doom, or death doom or what, but give them a go. :)

surely you do, middle eastern - folk music?

folk music from the area is different from the music from the palace. actually in turkey there are two traditions of music, one being folk, the other is called classical turkish music - which is basically composed by composers from istanbul around the sultan's palace. there is a world of difference between how these sound. even the language is different. i thought the original poster was asking something closer to the latter, but i haven't heard those orphaned land songs, so i am not quite sure.

i hate israel and whatever it comes from it. so Arabian metal ftw
