Andromeda, Necrophagist, Between the Buried and Me, Stratovarius, Angra, Spiral Architect, Freak Kitchen, Bumblefoot, Spastic Ink, Darkane...

Just a few of the "lesser known" bands that feature some prominent axemen, off the top of the head.

I'd check out Arch Enemy. It's showy but without being to complicated so it's kind of nice to start with.
