Dude, that third movement is crazy. It's an emotional frenzy, especially after the calm of the first two movements and the moodiness of the first in particular.

Loss of a Child

Another classical cat I think is worth mentioning is Alexander Scriabin, whose piano music ranges from the late-romantic to the atonal. He can be an acquired taste but he had some very unique compositional ideas and he was an influence on some of the giants of the 20th century.

And the best Beethoven piano sonatas are the late ones - like from no. 23 onwards and especially the last 5. The moonlight sonata is okay but pales in comparison to those IMO.
 
Rachmaninov's Concerto #2 is the one that destroys, but 1 - 3 are all almost necessities.

Pat Metheny - San Lorenzo (Yeah its a Metheny song but Mays kind of takes the song over)
Grateful Dead - Silver Apples of the Moon (one-off dual-piano piece with Bruce Hornsby that is out of this world)
or unexpectedly amazing Corea/Hiromi performance.

I laughed at the dream theater suggestion.

I forgot to say I love chopin, specially the nocturnes.
Plus Bill Evans was another really really great jazz piano player, altough I feel that he is different to the others.
