When I drag a region over another region, if I drag the same region again, the region that was underneath disapeared and I have to press ctrl+z if I want it back? Thats really annoying...

If you completely cover the original region on both ends, then you will need to either undo or drag the region out of the region bin to get it back. If any part of the original region is still visible, simply drag either end of it with the trimmer tool to get the original audio back.
OR you can make a duplicate playlist before editing the track - this way you can always flip back to the original playlist to grab any older regions you might need.
