Symbolic and Sound of Perseverance are my favorites. I'm not a huge Death or Chuck fan, but I loved his guitar tone. His playing was really nice and smooth, if maybe a little overrated by some people, but he was a great guitarist. There are many guitarists who have surpassed him technically but he had a specific touch that was really nice.

I've yet to hear anyone else that can make a Marshall Valvestate sound like that. His style is immediately recognizable, he always had thee best musicians in town, and his songs/riffs were always top notch, always ahead o' their time.

I've compared him to Frank Zappa, just more.... eeeevile?
