I really hate it when people say "should of" instead of "should've".

It's worse than that, I'm afraid. A lot of people use "should've" but when they decide they want to use "should of", they don't realize that it is really "should have".

I suppose I'll contribute to your pet peeve of "should have". I really hate it when people will use an apostrophe when it is not necessary.
