I really want to take only 2 -3 lessons to learn picking technique since my DI's are coming out very pansy. When I hit the strings harder it sounds like it should full and rounded. But I seem to hit other strings in the process and my sense of rhythm goes out the window a bit. I just would really like to learn from someone on here on the correct picking technique for getting the most out of your amp and the correct picking technique to getting the most out of your strings.

Anyone here willing to give me two or three lessons for a decent price? Or any suggestion on who to go to?

Use less power and aim for consistency. Try this excercise, its really easy one, play to a metronome.
Pick goes down, up, down, up, down, up, down, up and change string. Repeat the whole thing for 4 times and then add 5 bpm tempo. If you start to struggle even a bit, slow down 20bpm. If you get bored to the tone, change fret. Take a short break every 10-15 minutes.

Starting tempo: 60bpm

Code:
E|---------|---------|---------|---------|---------|---------|---------|---------|---------|---------|-5-5-5-5-|-5-5-5-5-|
B|---------|---------|---------|---------|---------|---------|---------|---------|-5-5-5-5-|-5-5-5-5-|---------|---------|
G|---------|---------|---------|---------|---------|---------|-5-5-5-5-|-5-5-5-5-|---------|---------|---------|---------|
D|---------|---------|---------|---------|-5-5-5-5-|-5-5-5-5-|---------|---------|---------|---------|---------|---------|
A|---------|---------|-5-5-5-5-|-5-5-5-5-|---------|---------|---------|---------|---------|---------|---------|---------|
E|-5-5-5-5-|-5-5-5-5-|---------|---------|---------|---------|---------|---------|---------|---------|---------|---------|

I agree with the picking routine practicing thing, though i think the dude should learn how to stay consistent AND powerful while picking.
Also i suggest practicing up & down strokes as you said, but also downstrokes only (and upstrokes only sometimes when like running scales for warm-up).

I alternate those types of picking when i practice and it works for me.
