"Metal" that's barely metal. Lots of melody, keyboards, acoustic guitar. Bonus points for non-prog non-power metal bands (though those will do).
Also, don't recommend Skyclad or Elvenking, I already know them.
 
Does this imply that you consider Skyclad to be barely metal? Your op is ambiguous, but I'll just recommend Secrecy, imo the cutest progressive metal band in existence despite being built upon a foundation of thrash riff-wise, with delightfully clean production, effeminate vocals, and lyrics of introspection, (often familial) relationships, and nostalgia.

Are you looking for stuff like Alcest, recent Anathema, Devin Townsend (Ki), Nightingale?

To me, Evenking is like full on power metal so I am curious.

Actually, that would be perfect, if only there was a BOC styled band that sounded a little more current and not so dated. I guess the Baroness Yellow and Green album would be another good reference point. Also, somewhat like Sonatica Artica (but not too much).

I love Alcest and Devin Townsend! I've heard a little bit of Anathema, what else would you recommend by them? As for Elvenking, I've only heard Two Tragedy Poets, which is not really power metal (or metal) at all if you ask me.
 
Soft Metal... maybe you'd like Hard Rock instead? Something like Motley Crue? Van Halen (has the keyboards too)? Boston? Queen?

They all have some borderline Heavy Metal songs.
 
Wolverine? While Heaven Wept (some)? The Autumn Effect by 10 Years? A Perfect Circle? Don't have my collection available to look at so hard to do this off memory.
 
Are you guys talking about early While Heaven Wept? I don't see how Of Empires Forlorn or Vast Oceans Lachrymose are exactly "soft metal".
 
Yeah Katatonia. Also, even though VOL has some heavy portions, overall the album is fairly "soft". I think most would also consider Evergrey "softer", especially the later stuff.
 
What about TON's "October Rust"? That's my go-to "soft" metal album...or Alcest's song "Elevation".
