This guy on youtube has a pretty good series on various recording/mixing tips. Although, in his tutorials he always uses some kind of Christian pop/rock for the examples, but they're still some pretty helpful tips here and there.

Otherwise Ermz's production guide book is full excellent info. Not a video series but very helpful for a production noob like me.
