Oh yah, don't know about At The Gates(never really heard 'em), but Amon Amarth and SYL are super heavy too. Not to mention good, it's one thing to be really heavy, but it's a whole other thing to be good and talented as well. And the above fill it all out nicely.
 
I think "heaviness" is from the feeling and atmosphere the band produces. For example, I'm listening to Azaghal's Mustaama album at the moment, and its a typically poor produced, trebly affair, with almost no low end (though the bass is audible, suprisingly).This is still a HEAVY album in my opinion, as they have just totally set the mood with this morose, atmospheric brand of aural misanthropy. Whereas well=produced bnds like Sevendust, Korn, Slipknot, etc. just sound like calculated pop music to these ears, as they offer nothing outside of aggression. At least the good death metal bands know atmosphere and emotion as opposed to the typical mainstream "I fucking hate you! Stop hating me! I'm not a freak, fuck you!" type stuff.
 
I think a lot of it's to do with the number of distorted guitars playing, as well as speed, vocals, bass, drums, and feel. Not very specific, but I always think it's a blend of everything.
