That sweeping exercise actually teaches a very important lesson: You can be technical and still really suck. That guy can deffenitely sweep pick, but what the point, if he cant make it sound good?

As for teaching sweeping, like most things, you need to start out slow and simple. He's playing fast sweeps, probably 5 or 6 strings, difficult shit - which leads me to believe that he's more concerned about his ego than about any of his students actually learning.

Best way to learn sweeping is major or minor arpegios, 2 strings.
 
at most parts it doesn´t even sound like sweep picking.... If I would make my guitar sound like crap and then just pick 2 random notes (one on a high string and one on a low string), it´s sound pretty much the same
