I know there has been better production, but At the Gates' Slaughter of the Soul has one of the best guitar tones I've ever heard. It has this sharp, rusty, raw sound and it's damn cool! I have to second Nevermore's tone, it's heavy as hell. The first two riffs of This Sacrament blow me away every time!
I enjoy the variety of guitar sounds out there but the one that I really dislike nowadays is the Sunlight studios guitarsound. It sounded really cool when I first heard but got boring rather quickly.
Opeth definately has an amazingly clear sound, mostly evident on Still Life, which I think has some of hte best production on any album I have ever heard. Even with the high amounts of multi-tracking you can still hear every guitar and clearly what it is playing.
John Petrucci I think has the best setup overall, but he has spent millions of dollars on it probably!

I think Children of Bodom have awesome Guitar sound's there Lead and Rhythem are great. But If I could have any kind of sound to my guitar it would be Opeth's I love the sound of the Palm Picking and there clean guitars on Still Life and Blackwater Park. Porcupine Tree also has great sounds on their Lead and Rhythem guitars. I love the sound of the Solo in Pure Narcotic and the Rhythem guitars on Even Less. Stupid Dream and Lightbulb Sun have some of the coolest guitar riffs and sounds I have ever heard.
I really like Peter Tagtgrens sound on his Ibanez 7 string.
Jeff Loomis from Nevermore gets a good one too.
I also like Jeff Waters from Annihilator he's got a unique sound.
