Do any of you guys write in compound time?

Yeah, but that's wrong. It's

3/4
1 2 3 1 2 3

and 6/8
1 2 3 4 5 6 (less emphasis on the 4 than on the 1)

Found a correct illustration, it's german, but I think you'll get it :)

Both are absolutely correct. But you're confusing us by using quarter notes in the 3/4 example and eight notes in the 6/8 example.

Nothing Else Matters is 6/8 all the way through, except a 3/8 bar here and there.

Everyone (even more) confused by this thread should read this: http://www.musictheory.net/lessons/15
It'll explain compound and simple metering in a far more pedagogical way than we seem to be able to do.

RE: Master of Puppets there's some controversy around that fill, 5/8, 11/16, 6/8 are all pretty common and 11/16 as the most common one. But that one feels weird though doesn't it? Metallica aren't exactly known for playing crazy shit like that...

Yep, it's definitely 6/8 if you follow the drums with a few 3/8 bars here and there.
OT, if you want to hear something different to most, try this:

9/8 for most of the start, 6/4 with a 4/4 polyrhythm feel during the solo and a 6/4 over 9/8 polymeter in the bridge just after the solo. Cool shit!

never liked using odd time sigs.
there's a good reason why most modern music is written in 4/4.
your mind anticipates a change after the 4th beat, it's natural.
read it in a couple of psycoacoustic-shit books, anyway it just sounds "right"
and i don't like going against what naturally sounds good.
that being said, i love inserting an extra beat or 2 to a break to confuse the ear a little, but almost never half a beat.
it's possible to keep your groove going with odd time sigs. but 99% of the time it just get's the crowd out of rythem.

that being said, Lamb Of God VIGIL ends with 11/8 and it's fucking amazing!

Apparently it's also just the way music has been composed in our society or areas of the world. I've heard in some areas of the world, 7/8 or something is the standard simply because it's just the sig they got use to and don't know different.

Here's some odd times for ya.
