My recording setup right now is my keyboard connected to the line-in port in my computer. Free and easy-to-use, yes, but the recording quality sounds like it was done in a cave. Can anyone recommend some recording equipment that could be used in tandem with my computer; something that would give better sound quality?

you could also get yourself a nice mixer ( Behringer Eurorack series for example.)
and place that in between of your Keys and CPU.
the sound get's better because of the signal putted through by the mixer
and you don't have to buy an expensive soundcard.....
