apocalyptica-metallica cover nothing else matters
7 tears are flowing to the river-nargaroth (not completely instrumental, but pretty damned close)
and i think ill just leave it in my top 2 cuz i dont rember any other instrumental other than classical music...
 
Katatonia - Instrumental (the guitar interplay is incredibly beautiful. I often get chills by the lead)
Anathema - 2000 And Gone (great chillout song with fine acoustics)
Dream Theater - Overture 1928 (great melody throughout)
Agalloch - The Misshappen Steed (pure atmosphere)
Emperor - Al Svartr, The Oath (incredible acoustics. gives me chills every time)

I can't really think of more than a few...I know my favorite at least.

Dream Theater - The Dance of Eternity

Katatonia - Inside the City of Glass is also excellent, mostly because I feel like it really works as an ending to that cd, and even without vocals manages to be quite bleak, I think.
 
First of all one of the most underrated songs of one of the most underrated bands:

- EUCHARIST - The Eucharist (everyone MUST buy the "Mirrorworlds" album, it should be punished not to own it), this is just an awesome track, great melodies, great dynamics, great harmonies, great atmosphere.

- Metallica - Orion
- Porcupine Tree - Ambulance Chasing
- Daylight Dies - Dismantling Devotion
- Katatonia - For Funerals To Come... (OK, it features a few lines of speech, but I consider it an instrumental)
