You need to study historical linguistics to understand a lot of the weird things in English. And believe me, it's not an easy subject. I barely passed, after failing it once.

The english language has a lot of confusing contradictions, mostly because of the wide variety of ancient languages it is formed from.

The word violincello however comes straight from italy in at some point in the 1700s, hence the "ch" sound. IIRC the shortening to cello itself happens in the early 1800s

The classic example of ridiculous English pronunciation is of course "laugh", i mean seriously WTF is with that word!
