It's more to do with advances in health care. Things like heart disease and cancer are at a higher rate than they were before eating meat became a regular part of life.

I've seen a few studies or whatever on countries which are becoming more "westernized" due to better economies, and along with people being able to afford meat on a regular basis (and the introduction of fast food), obesity related diseases and colon cancer rates are climbing higher.
