I want to listen to some Jazz but I don't know where to start.

There's a song that comes with Windows Media Player by Aaron Goldberg and it's pretty fucking cool. It's instrumental and has some nice piano, bass and drum work. Very awesome song, I plan on getting some of his material.

I'd also like to hear some Jazz influenced Metal that isn't Atheist or Cynic because I already know of them.

as far as jazz metal goes, Ephel Duath. Some people also enjoy Yakuza, but I don't. eh I can't think of any others right now. my brain isn't working
 
Diablo Swing Orchestra - The Butcher's Ballroom

It's about as jazzy as you can get without being considered jazz. Great album.

The first song is incredibly jazzy, but most of the following songs don't contain any jazz influence. Still a great album none the less.
 
Spiral Architect (prog-metal with jazz/fusion influence)
Coprofago (death metal in the vain of Meshuggah but with more melody and jazzy interludes)
 
For Jazz influenced you can also try Candiria or Pitbulls in the Nursery.

For pure jazz I like Pat Martino, John Pattatucci and Al Dimeola.
 
Try A Conflict Scenario by Virulence, it's death metal with some jazzy parts, tis very good. Check out Wayd as well, there another detah metal band with a heavy jazz influence, I've only really listened to Barriers and it's hella good.
 
Yes Ephel Duath is jazzy, basically in the later releases, check out the song Unpoetic Circle on The Painter's Palette for a good example.. the earlier stuff is not jazzy.
