Well I have the Digitech RP-12 and it seems to give me a great Katatonia sound. If people think THAT sounds bad they're obviously playing through the wrong (or very bad) amps.

I couldn't say for the settings cos I use seperate Boos pedals and not the GT-3 combo.
I'm planning to throw my fucking Epiphone pick-ups out of my guitar though and replace it with Seymour Duncans or EMG's. I think you should do something similar, as Epiphone pick-ups are eh... crappy.
