the threshold value doesn't really matter but how much is gain reduction as the threshold depends on the material context

I was just letting him know where I had my compressor set, not saying these are the best settings or even ones he wants to use because obviously the signal source is gonna determine 99% of everything but to answer your question ... its pulling the gain back about 3-4 dbs max

Try a small-ish room on the Hammond, say, 200-500ms?

hmm well quickly like that I would try to remove some high frequencies from organ and "stereophonize it" very small, maybe with a surround plug-in. I would try to make the organ sound distant and the guitars in your face. It is more of a rhythm organ so ya, no need to be up front, so less need to have so many high frequencies... maybe.
