Sonata Arctica's cover of Still Loving You is great.
Also, Queesryche's Scarbourough Fair.
Metallica's Last Caress/Green Hell, Stone Cold Crazy, Breadfan, pretty much anything they touched in the eighties turned to gold.
I found a pretty cool cover of Ronnie J. Dio and Yngwie J. Malmsteen doing Aero J. Smith's Dream On. It was on Napster so I don't know where it come from originally.
And of course...Judas Priest's Diamonds and Rust originally by Joan Baez.

If you want to talk about really unusual covers, has any other power or prog band covered a contemporary? I'm referring to Sonata Arctica covering a Vanishing Point song.

That would be like Pagan's Mind doing End of Light or something.

Not sure this counts as "mainstream", but Iron Maiden recorded Jethro Tull's "Cross-Eyed Mary" and released it as the b-side of a single in the late 80s/early 90s. I had it on cassette at one point -- wish I could find it again!
