Braindrill are the most absurdly technical band I can think of. Not particularly good. Fun in short bursts, I guess, but terrible songwriters. Pretty much the definition of wankery.

Nile, Cynic, Atheist, Gorguts, The Faceless, Pestilence are all quite technical in terms of death metal.(and they don't suck either)

Most insane would be Necrophagist for me.
Basically, a Malmsteen who can burp and fart.
