It's the same as every other cooking, but with more bacon, and everything is saturated in tabasco.

Just went to a creole and cajun site....flour cooked in oil yuk...lot of butter yuk.............I do do spicey and use chilli,tobasco,cayen pepper but I hate high oil or fat content food!

To make "genuine" cajun, you need to use a heap of oil. Tastes great, but is a once or twice a year proposition.

I cheat, and make a "dry roux", by roasting flour in the oven, rather than cooking it in oil.

Works nearly as well.
