I think death's releases can pretty much be divided into two main sounds, from before and after Human...
The earlier sound is rawer, and the lyrics seem to be less intro/extrospective. (more gore based lyrics) Human and it's successors see the death sound develop along a natural progression while still staying true to their own signature sound. I recommend Human, Symbolic and the Sound of Perseverence. Symbolic would have to be my personal fav, though
 
Spiritual Healing (the one before Human) is also a very technical death metal album but still maintining some of the gruffness of the previous releases. Also the gore lyrics are only present on Scream Bloody Gore, their first CDs. Everything after that contains intelligent lyrics.
 
Death is only comparable to Opeth in the way both bands progress because every Death cd is a step foward from the previous but always having several elements from the past cds...to get a good view of all the elements of death ( the agressivity from the old days the fussion elements the impressive drumming ) i recomend starting with Human is somehow in the middle of chucks creation but i know people who started from The sound of Perseverance and from there tracked down and they are quite pleased with all Chuck work. Somehow most of us Death fans end up in love with the control denied/TSOP era....
 
My first Death album was Symbolic and it's still my favorite one. I love all their stuff though.. but I haven't listened to the whole TSOP album yet. I recommend Symbolic :)
