What is the exact distinction between...

I know that New York styles of any music seem to be faster, less intelectual, more punky... that kind of thing.

Floridian style was mature and had a degree of technicality to it, as it developed...

Just a guess though...
 
New York death sounds like a subway.
Florida death sounds like a swamp.

Enter Immolation. One of the best and biggest bands in the New York death metal scene. Can't say that they sound punky or that they aren't technical now caaaaaaan you?

I dunno about that. Suffocation, and Immolation, who are from New York have quite complex and technical music, while some Florida bands like Death and Morbid Angel have music that is more simple.
 
Death's early stuff was quite simple, but the latter stuff (Human,TSOP,ITP) was far and I mean far from simple (highly technical) although it's not relevant to the case since you can't compare Suffocation or Immolation with later Death.
