Tough one. Both "Orion" and "Call of Ktulu" are fantastic. I also love Genghis Khan by Iron Maiden. "Dialogue with the Stars" has strong melodies, it's also up there.

But come one folks, I'm surprised no one has mentioned, "The Ultra Violence" by Death Angel? That song is a behemoth!!!!
 
Too many great instrumental tracks. At the moment, probably "Rivers Dancing" from Gordian Knot.
