Which metal albums do you think really stand out from the bunch when it comes to guitar sound?

I would say:

Metallica - Garage Inc.
Annihilator - First three albums
Decapitated - Nihility
Sinner - The Nature Of Evil
 
I don't know. I don't know shit about guitar sounds or tones. My spectre of categorizing guitar sounds is limited to "shit", "ok", and "good".

shit sounding guitar example: Dream Theater - Systematic Chaos

ok sounding guitar example: Symphony X - Divine Wings, Twilight in Olympus, The Odyssey

good sounding guitar example: The newer Opeth albums or Emperor - In the Nightside Eclipse

Have a guess about which one I wasn't completely serious about.

Gojira - all albums
Volbeat - all albums
Satyricon - most albums
Sepultura - most albums
Arch Enemy - quality varies but has always had high quality in terms of sound.

I love the Bloodbath sound on Nightmares Made Flesh.
Isis - Mosquitio Control, The Red Sea
Evoken - A Caress of the Void
Agalloch - Pale Folklore

I also really love the bloodbath sound on ressurection through carnage.
Its really bad, but I love it!
 
Nevermore - This Godless Endeavor. Man, the guitars on that one are crushing.
Gojira also has good guitar sound.
Opeth, especially on Ghost Reveries and Blackwater Park.
I also love the guitars on The Novella Reservoir by Novembers Doom.
Master of Puppets. Rust in Peace.
 
I really like the tone on Darkthrone's 'A Blaze in the Northern Sky' - it makes it sound more evil.

Also, I think that Michael Amott plays with a beautiful tone.

And At the Gates' 'Slaughter of the Soul' has also got a pretty awesome guitar tone.
